Located in the Sycuan Casino Resort, our modern steakhouse is a love letter to high end butchery. Not only do we have some of the most luscious hand-cut steaks in town, but we have an on-site dry aging program too! 

Premium proteins abound on our menu, from American Wagyu beef to filet mignon and plenty of dry-aged options. 

Here, we’ll take you on a tour of our most popular steak offerings…go ahead, educate yourself on the many options and pick one to try next! 

Filet Mignon

This is the steak equivalent of pork tenderloin. It’s a premium cut from the psoas major of the cow, and boasts an extremely tender texture. It’s not hard to see why it’s sometimes called “the King of Steaks”––it’s as exquisite to eat as the name is to say.

At Bull & Bourbon, we offer an 8-ounce Grass Fed Filet Mignon from Lone Pine Ranch in Northern California. 

New York Strip

This is a cut from the cow’s short loin. That’s not an extremely active muscle, which means that the meat is extremely tender, though with a little firmer texture than a filet mignon. 

The cut was popularized by the iconic New York restaurant Delmonico’s in the 1800s, and has been referred to as “New York Strip” ever since.

On our hand-cut steaks section of the menu, you’ll find a 16-ounce New York Strip from Creekstone Farms in Kansas. For lovers of dry-aged steak, we also offer a 22-ounce New York Strip, also from Creekstone Farms.

Porterhouse 

Try the “T!” The porterhouse cut has a shape similar to a t-bone steak, but is from the rear end of the short loin. It includes a little bit of tenderloin and a little bit of strip steak…for some, this is the best of both worlds! 

We’ve got a dry aged bone-in 32-ounce Porterhouse on the menu, sourced from Double R Ranch in Washington.

Ribeye

Straight from the rib section of the cow, this is one of the most flavorful and juicy cuts of steak, with plenty of rich marbling. 

At Bull & Bourbon, we have plenty of variations on this popular cut, including…

  • Delmonico Ribeye: This is a thick-cut version of ribeye that is hearty, rich, and completely satisfying. Our 18-ounce Delmonico Ribeye is from Double R Ranch in Washington. 
  • Tomahawk Ribeye: Go big or go home! This bone-in version of ribeye is massive, and jam-packed with rich beefy flavor. Our 36-ounce Tomahawk Ribeye comes from Creekstone Farms in Kansas.
  • Wagyu Center Cut Ribeye: If you’ve never tried Wagyu beef, you’re really in for a treat…learn more about it in this post! Our 16-ounce Wagyu Center Cut Ribeye comes from Snake River Farms in Idaho.
